The pioneering spirit of Bill and Lyn Lark, the founders of the distillery, cannot be overstated. They recognised the profound impact of Tasmania’s dramatic temperature fluctuations on whisky maturation. This dynamic climate forces the spirit to interact intensely with the cask, imbuing it with a depth and complexity of flavour that is exceptionally difficult to replicate elsewhere in the world.

Furthermore, it was the Larks who, in 1992, successfully campaigned to overturn a long-standing ban on whisky distillation in Tasmania. This landmark achievement paved the way for the flourishing Tasmanian whisky industry, which now boasts over 80 distilleries, a testament to their foresight and dedication.
Lark’s commitment to quality has been consistently recognised on the international stage. In the 2025 San Francisco World Spirits Competition, the distillery secured an impressive haul of three double gold medals and two gold medals. Their success continued at the World Whiskies Awards, where they garnered five accolades. Adding to this stellar reputation, Lark’s Master Distiller, Chris Thomson, was recently named World Whiskies Awards Master Blender and Master Distiller of the Year (Rest of the World), a remarkable achievement underscoring his expertise.
