Lemon Meringue Cupcakes Recipe

This recipe for Lemon Meringue Cupcakes is a delightful twist on traditional desserts, combining the tangy sweetness of lemon with the fluffy texture of meringue. The result is a light and refreshing treat that’s perfect for any occasion.

Ingredients

To make these cupcakes, you will need the following ingredients:

  • 470g Lemon Cake Mix
  • 2/3 cup lemon curd
  • 3 egg whites, at room temperature
  • ¾ cup caster sugar
  • Icing sugar, to dust

Method

Step 1: Prepare the Muffin Pan

Start by lining 10 holes in a 12-hole muffin pan with 4cm-deep paper muffin cases. This ensures even baking and makes it easier to handle the cupcakes once they’re done.

Step 2: Make the Cake Mixture

Prepare the cake mix according to the instructions on the packet. Once ready, reserve the icing sachet for another use. Divide the mixture evenly into the paper cases, filling each about two-thirds full.

Step 3: Bake the Cupcakes

Place the muffin pan in a preheated oven set to 160°C. Bake for 20–25 minutes, or until the cakes are lightly golden and spring back when gently touched in the center. Allow the cupcakes to stand in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 4: Add the Lemon Curd

Using a small, sharp knife, cut a 6cm circle from the top of each cake, about 1cm deep. Reserve the cake circles for another use. Dust the edges of the cakes with icing sugar. Spoon the lemon curd evenly into the hollows of the cupcakes, using approximately 3 teaspoons per cupcake.

Step 5: Prepare the Meringue

In a small bowl, beat the egg whites and caster sugar using an electric mixer for 6–7 minutes, or until the sugar is fully dissolved and firm peaks form. Stop occasionally to scrape down the sides of the bowl to ensure even mixing. Spoon the meringue into a piping bag fitted with a 15mm plain nozzle.

Step 6: Pipe and Brown the Meringue

Pipe the meringue over the lemon curd, as shown in the image. Use a kitchen blow torch to brown the meringue to your desired level of crispiness.
