Tina Knowles’ Gumbo Stall Temporarily Shuttered by Health Inspectors
Beyoncé’s mother, Tina Knowles, faced a brief but significant interruption at her popular Mama Tina’s Gumbo booth this week. The food stand, a fixture at the Houston Livestock Show and Rodeo, was temporarily closed by the Houston Health Department due to a complaint investigation.
The 72-year-old entrepreneur, known for her culinary talents and the famed gumbo she often discusses in interviews, had opened her stall at the rodeo event, scheduled to operate from March 2nd until March 22nd. However, official statements confirm that the business was compelled to cease operations on March 16th.
According to information released by the Houston Health Department (HHD), the closure was a direct result of an investigation prompted by a complaint. The vendor, Mama Tina’s Gumbo, was reportedly cooperative with the department’s directives and subsequently passed a follow-up inspection. This allowed the stall to be cleared for reopening on March 17th, just one day after its temporary shutdown.
A Gumbo Recipe with Deep Roots
In an interview, Knowles elaborated on the offerings at her popular stand, highlighting two distinct gumbo varieties: a hearty chicken-and-sausage option and her personal favourite, a rich seafood flavour. The secret to the dish’s intense taste, she revealed, lies in a lengthy simmering process, with the gumbo being cooked for an impressive 16 to 18 hours to develop its robust flavour profile.
Knowles also shared insights into the origins of the recipe. She explained that she collaborated with two younger partners who had developed a “delicious gumbo” which she encountered during her book tour. Incorporating her own “Louisiana touches” and “family recipe little tricks,” Knowles blended these elements to create what she describes as a “hybrid” of both culinary styles.
A Family Affair: Beyoncé’s Love for Gumbo
The appeal of Mama Tina’s Gumbo extends to the highest echelons of the Knowles-Carter family. Knowles confided to a TikToker that her superstar daughter, Beyoncé, is an ardent fan of the dish, frequently requesting it. “Beyoncé absolutely loves this gumbo,” Knowles stated, adding that her daughter “would have it all the time, she’s always asking.”

The culinary delights offered at Mama Tina’s Gumbo have also garnered appreciation from other notable figures. LeToya Luckett, a former member of the globally successful girl group Destiny’s Child, was spotted visiting the food stand. An Instagram video shared by Knowles captured Luckett giving a positive review, a thumbs-up to the camera, while holding a pot of the now-reopened gumbo.
Knowles herself has spoken about her journey with cooking, particularly gumbo. During a 2025 appearance on the “House Guest” podcast, she recounted to host Scott Evans how she honed her skills by acting as her mother’s “sous chef” in the kitchen. She humorously admitted that for a time, gumbo was the “only thing I knew how to cook,” and it served as a rather effective way to impress potential suitors. “You know I would meet a guy and I would make gumbo and he would say ‘Oh man, she can throw down, she can really cook,’” she recalled.
The Houston Health Department’s temporary closure, while a brief setback, ultimately highlights the rigorous standards in place for food vendors. Mama Tina’s Gumbo’s swift return to operation demonstrates the vendor’s commitment to compliance and the quality of their beloved dish.
